Tonight you will sleep in renovated wine cellars, originally built in 1907 by the Joubert Family. Later the cellar was converted into stables, but over the years farming methods changed, co-operative wineries were established and this is what your rooms looked like prior to 1996.
Room 1 continued to be used as a stable, room 2 became a garage as cars became affordable, room 3 was a bachelor's flat used by the older sons of the family, rooms 4 & 5 were a large storeroom, room 6 was a farm shop (in use until 1995) and rooms 7 & 8 were the "poison" room.
Gielie Hanekom bought Soverby in 1988. After lots of thought and research Gielie and Dolly decided to convert this old wine cellar into 8 guest rooms. Renovation started the end of 1995. It took about two months to demolish the old wine tanks which were reinforced with steel cables. Remember, steel was not available at the turn of the century and these steel cables were transported from Okiep Copper Mines in Namaqualand. These cables were re-used in the entrance wall, just to keep the history going!
Soverby means "just beyond the border of Cape Town and Stellenbosch" but in Danish it means "Sleeping Village" - how appropriate! Soverby Guest House opened it's doors to the public on 6 May 1996 and we are fortunate to meet so many people and make so many new friends!
